Pale, almost white-gold in the cup, which surprised me for a sencha. Tastes like steamed spinach with a squeeze of lime, then turns sweet as it cools. Second steep was the best one; the third went soft and grassy.

High amino acid content. Cultivar origin: created by tea master Akihito Takaki from seeds of the mutated plants and named Hakusei (“White Star”) after the village of Hoshino, whose own name means “Star Field” Cultivation Information: Growing conditions: Cooler mountain valleys; harvest runs roughly a month behind the lowland areas. Sencha is uncommon in Yame. Short, cool steeps today. Very sweet, close to edamame and sugar snap peas, with almost no bitterness even when I forgot the timer for a few seconds. Two steeps and the leaves were still bright green.
